Single Origin Beans
Honoka'a dark chocolate and barrel-aged cacao is made with hand-selected, local beans. Our clean air, water and soil coupled with a humid climate create ideal growing conditions to produce world-class beans. Hawai'i is the only state in the US that grows cacao. Cacao for our milk chocolate is sourced from Camino Verde Fermentary in Ecuador.

A few tips for tasting chocolate
Temperature
Chocolate should be enjoyed at room temperature to maintain its desirable texture, avoid exposing to temperatures above 85°F can affect smoothness and finish.
Fragrance
Take a moment to smell the chocolate as different bars can vary greatly in fragrance, ranging from vibrant fruit notes to subtle aromas.
Tasting Technique
Similar to wine tasting, cover your palate with chocolate to experience all its flavors. Chew the chocolate, then wait for half a minute before swallowing to fully appreciate its taste.
Attributes and Balance
Pay attention to the chocolate's mouthfeel and flavor progression (opening, middle, finish) and overall balance. Look for harmonious integration of attributes without any one overpowering note. Consider acidity, bitterness, and astringency, which add complexity when well balanced.
